Love this take on how serendipity beats systematic screening. The fact that these molecules barely resemble sucrose but still hijack sweet receptors is wild. It makes me think about how much innovation we're probably missing by over-optimizing for safety protocols, even tho I totally get why we need them. That line about "reality reveals itself on human timescales through human messiness" kinda captures the whole tradeoff perfectly.
