Hudson River Rail Excursions runs regular short trips aboard some restored cars. The most interesting of these is 'Hickory Creek', a dome observation car that ran on the luxurious 20th Century Limited starting in 1949. I rode a day New York to Albany trip in it and it was a great experience.
The French artist JR recently did a project for the Simplon-Orient-Express which involved transforming a train car into this elaborate and luxury art/transport piece. Slightly different from the context of these privately owned and attached train cars, but it reminded me of a modern equivalent
